Chicken curry is a popular dish that originates from India. Its popularity reaches globally because of its unique peppery and spicy tastes. This recipe is an excellent way to add some versatility to your dinner.

Ingredients

  • 2 pounds boneless skinless  chicken breasts
  • 1 chopped medium onion 
  • 2 minced cloves garlic
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon minced ginger
  • 1 teaspoon chili powder
  • 1 teaspoon paprika 
  • 1 teaspoon ground coriander 
  • 1/2 teaspoon ground cumin
  • 1 can crushed tomatoes 
  • 1 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • Salt
  • 1 tablespoon freshly chopped cilantro for garnish 

Instructions

  1. Cut chicken into pieces, set aside.
  2. Heat the oil on medium-high heat in a large saucepan.
  3. Sauté the onion and stir until soft.
  4. Add the chicken, searing for 5 minutes, then add the ginger and garlic and cook for 1 minute until aromatic.
  5. Pour the spices and cook for one minute. Stir in crushed tomatoes and pour the broth; simmer.
  6. Pour the heavy cream; add salt. Simmer the mixture for 10 minutes until the chicken is tender.
  7. Top with fresh cilantro.
  8. Serve hot with naan or some rice or even mashed potato or noodles.
