Nothing is better and easiest than pancakes in the
morning to start the day with.
Buttermilk makes those pancakes light and fluffy and
helps to activate the baking soda also acts as an acid, eating away at the
flour or gluten in the pancakes. This is what makes the cakes so soft.
- 2 and 1/2 cups all-purpose (or plain flour)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1tbsp vanilla extract
- 2 eggs
- 2 cups buttermilk
- 1/2 cup milk
- 1/4 cup granulated sugar
- 1/4 cup vegan oil
Instructions
- In a bowl mix the dry ingredients the flour, soda, baking powder, salt, sugar and vanilla extract, add in the eggs, oil, milk and buttermilk mix well until smooth (the batter will be thick and creamy in consistency. If you find the batter too thick fold a couple tablespoons of milk into the batter at a time until reaching desired consistency).
- Brush a non-stick pan with vegan oil, wipe off any access of oil. Pour about 1/4 of the batter into the hot pan cook over low medium heat.
- Once bubbles appear on the top flip the pancake wait about 1 minute for the other side too cook and brown.
- Serve with honey and butter, maple syrup, fruit, ice cream, or enjoy plain!
